The exceptional conformation of the breed is the principal success of using a Charmoise Ram on different cross breeding schemes to produce high quality meat lambs. This, coupled with a fine bone structure gives a remarkable meat to bone ratio and excellent killing out %.

Meat carcasses from pure bred charmoise can be produced up to 21Kg off grass with killing out percentage of 52%. The meat is known to have exceptional eating quality, and is such that it retains a ‘light’ meat colour even in lambs finished late on grass.
